I finally found a new source for mushrooms!! This is one of my favorite ways to prep oyster mushrooms. They’re cheap and healthy. I add them to a meal prep with broccoli and quinoa or rice, with some easy ACV sauce and cilantro, and maybe some avocado. Give it a try and let me know what you think!
Air-fried Oyster Mushrooms

1 package oyster mushrooms (1/2 lb)
1 tbsp miso paste
2 tbsp soy sauce
2 tbsp rice vinegar
1/2 tbsp sriracha
1 tsp chili garlic paste
2 tbsp warm water
Directions
- Tear up oyster mushrooms into chunks, put in mixing bowl.
- Combine rest of ingredients and stir until miso is mostly dissolved.
- Pour over mushrooms and toss, marinate for at least 30 minutes in fridge.
- Air fry at 395°F for 8-10 minutes, stirring halfway.
- Enjoy!
