I love the flavors of Greek food but very rarely can you find plant-based versions in my part of the world. So I used my favorite substitute for a healthy version: mushrooms! The secret, like with all mushroom recipes, is to let it marinate and get it nice and crispy.

King Oyster Gyros

8 oz mini king Oyster mushrooms, shredded
1 cup vegetable broth
2 tbsp soy sauce
1 tbsp vegan Worchestershire sauce
1 tbsp onion powder
1/2 tbsp minced garlic
1 tsp dried oregano
1 tsp ground cumin
1 tsp dried marjoram
1 tsp ground dried rosemary
1 tsp ground dried thyme
1 tsp ground black pepper
1/2 teaspoon sea salt
Directions
- Shred mushrooms with a fork, add to large bowl.
- Mix marinade ingredients. Pour over mushrooms and toss.
- Marinate for at least 30 minutes in the fridge.
- Preheat oven to 400*F.
- Spread mushrooms and marinade on foil-covered baking sheet.
- Bake at 400F for 30-40 minutes, stirring at halfway.
- Enjoy!
