King Oyster Mushroom Gyros

Hey babes!

I love the flavors of Greek food but very rarely can you find plant-based versions in my part of the world. So I used my favorite substitute for a healthy version: mushrooms! The secret, like with all mushroom recipes, is to let it marinate and get it nice and crispy.

King Oyster Gyros

Ingredients

  • 8 oz mini king Oyster mushrooms, shredded

  • 1 cup vegetable broth

  • 2 tbsp soy sauce

  • 1 tbsp vegan Worchestershire sauce

  • 1 tbsp onion powder

  • 1/2 tbsp minced garlic

  • 1 tsp dried oregano

  • 1 tsp ground cumin

  • 1 tsp dried marjoram

  • 1 tsp ground dried rosemary

  • 1 tsp ground dried thyme

  • 1 tsp ground black pepper

  • 1/2 teaspoon sea salt

Directions

  • Shred mushrooms with a fork, add to large bowl.
  • Mix marinade ingredients. Pour over mushrooms and toss.
  • Marinate for at least 30 minutes in the fridge.
  • Preheat oven to 400*F.
  • Spread mushrooms and marinade on foil-covered baking sheet.
  • Bake at 400F for 30-40 minutes, stirring at halfway.
  • Enjoy!
