Vegan Cheese Sauce (WFPB, oil-free)

Hey babes!

I love my veggies just as they are (ROASTED), but the easiest way to get my kids pound their broccoli is with cheese. And, truthfully, I love me some nachos. Cashew cheese is bomb as all hell, but it can be expensive and is very calorie dense. So, as a slightly lighter, cheaper alternative, try this! Made from the cheapest ingredients in the produce section.

Vegan Cheese Sauce (WFPB, oil-free)

Ingredients

  • 1 cup peeled and chopped red potato

  • 1/2 cup peeled and chopped carrots (about 2-3 carrots)

  • 1 1/2 cups unsweetened non-dairy milk

  • 1/2 cup nutritional yeast

  • 1 tablespoon lemon juice

  • 1 teaspoon salt

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon smoked paprika

  • 1/2 tablespoon annatto powder (achiote)

  • 1/2 tablespoon cornstarch

  • 1/4 cup pickled jalapenos

Directions

  • Cook potatoes and carrots in microwave-safe dish with 1/4 cup water in microwave on high for 2-3 minutes or until tender. Drain and rinse.
  • Add all ingredients to high-powered blender.
  • Blend on high until smooth.
  • Add to saucepan on stovetop and heat to simmering. Simmer for 3-5 minutes.
  • Enjoy!
