This is one of my favorite quick “cheese” recipes, made possible by the delicious probiotic goodness of miso paste! Enjoy on crackers, salads, bowls, and more. Let me know in the comments what you think, and of course if you have any questions!
Tangy Probiotic Tofu Feta

2 tbsp warm water
2 tsp white miso
2 tbsp veggie broth
1 1/2 tbsp nutritional yeast
2 tbsp apple cider vinegar
2 tsp lemon juice
1 1/4 tsp salt
1/2 tsp garlic powder
1 tsp oregano
1 lb firm tofu
Directions
- Press tofu in a tofu press or on a plate under a heavy skillet and a bunch of books for 10-20 minutes.
- Cube tofu.
- Mix all other ingredients in a bowl.
- Pour mixture over tofu in a sealable container.
- Mix well to coat tofu, refrigerate for at least 1 hour.
- Enjoy for weeks!
